I like the idea of making something functional, a structure that people can interact with by entering/sitting on/ climbing, etc. It might be cool to make some sort of spiral staircase to nowhere, like the one below but solid so people could actually climb it. I also found a photo of a snow structure that looks really awesome, so we could also make some kind of elaborate "igloo" for people to enter and explore.
